dc.description.abstractThe invention relates to a flavonoid delivery system comprising a co-precipitate of a hydrophobic flavonoid and a protein. The flavonoid delivery system comprises a high ratio of flavonoid to protein, allowing food products to be fortified with relatively large amounts of flavonoid without compromising the sensory properties of the food product.
