    Global protein sustainability and the United Nations, through to the 2030 agenda

    Organizations and initiatives concerned with food security and nutrition have long positioned protein, together with dietary energy, as the keystone for life itself. Indeed, the word protein, derived from the Greek proteios, means ‘of primary importance’. There is a long history of attention to, and controversies over, proteins in UN processes, beginning in the 1930s and continuing to this day. The importance of protein for agriculture, health, food security and nutrition is reflected in the data collected and presented in the statistical databases of the Food and Agriculture Organization (FAOSTAT), available per commodity, per country and over an extensive time series. Protein features directly and indirectly in all 17 Sustainable Development Goals (SDG), which constitute the United Nations 2030 Agenda. Most directly involved is SDG 2. The short title for SDG 2 is ‘zero hunger’. The long title offers more detail: end hunger, achieve food security and improved nutrition and promote sustainable agriculture.

    Diet affordability: a key dimension in the assessment of sustainable food systems and healthy diets

    A promulgated global shift toward a plant-based diet is largely in response to a perceived negative environmental impact of animal food production, but the nutritional adequacy and economic implications of plant-sourced sustainable healthy dietary patterns need to be considered. This paper reviews recent modeling studies using Linear Programming to determine the respective roles of animal- and plant-sourced foods in developing a least-cost diet in the United States and New Zealand. In both economies, least-cost diets were found to include animal-based foods, such as milk, eggs, fish, and seafood, to meet the energy and nutrient requirements of healthy adults at the lowest retail cost. To model a solely plant-based least-cost diet, the prevailing costs of all animal-sourced foods had to be increased by 1.1 to 11.5 times their original retail prices. This led to the inclusion of fortified plant-based foods, such as fortified soymilk, and a plant-based diet that was considerably (34–45%) more costly. The first-limiting essential nutrients were mostly the vitamins and minerals, with special focus on pantothenic acid, zinc, and vitamin B-12, when transitioning from an animal- and plant-containing least-cost diet to a plant-only based least-cost diet. Modeled least-cost diets based on contemporary food costs include animal-sourced foods, at least for developed high-income US and NZ food economies, and potentially for developing low- and middle-income countries, such as Indonesia. Modeling of least-cost diets that consist exclusively of plant-based foods is feasible, but at a higher daily diet cost, and these diets are often close to limiting for several key nutrients. Diet affordability, as a key dimension of sustainable healthy diets, and the respective economic roles of animal- and plant-sourced foods need to be considered.

    The Importance of Dietary Protein Quality in Mid- to High-Income Countries

    In wealthy countries, the protein intake of adults is usually considered to be adequate, and considerations of protein quality are often deemed irrelevant. The objective was to examine dietary protein intakes of adults in developed countries in the context of dietary protein quality. An analysis of NHANES population data on actual protein intakes in the United States (a developed country) demonstrated that for a dietary Digestible Indispensable Amino Acid Score (DIAAS) of 100%, 11% of the adult (19-50 y) population had habitual protein intakes below the Estimated Average Requirement (EAR) and 22% below the Recommended Dietary Allowance. The percentage of the population with utilizable protein intakes potentially falling below the EAR increased as the assumed DIAAS declined. Analysis of the NHANES data and several other datasets also indicated that total protein intakes can be limiting or close to limiting for the elderly and some vegetarians and vegans. Here, lower dietary protein quality can potentially lead to inadequate utilizable protein intakes. For many people in specific physiological states (e.g., weight loss, endurance sports, resistance exercise) attempting to meet higher dietary protein targets often with accompanying lowered energy intakes, low dietary protein quality can lead to protein calories expressed as a proportion of total calories, falling outside what may be acceptable limits (maximum of 30% protein calories from total calories). In general, individuals within the adult population may be susceptible to macronutrient imbalance (whenever total protein intakes are high, daily energy intakes low) and for diets with lower protein quality (DIAAS <100%). Our analysis shows that dietary protein quality is relevant in mid- to high-income countries.

    Protein and amino acid digestibility: definitions and conventional oro-ileal determination in humans

    When assessing protein quality, a correction needs to be made to take into consideration the availability of the amino acids. This correction is based on the digestibility of the amino acids. It is recommended to use ileal (end of small intestine) digestibility as opposed to faecal digestibility. A correction needs to be made for endogenous (gut sourced as opposed to diet sourced) amino acids to give true digestibility as opposed to apparent digestibility. Also, this correction should be made by correcting the amino acid composition for individual amino acid digestibilities as opposed to correcting all amino acids for nitrogen digestibility. Determination of true ileal amino acid digestibility requires the collection of ileal digesta. In the human there are two methods that can be used; naso-ileal intubation and using the ileostomy model. Both are discussed in detail and it is concluded that both are appropriate methods to collect ileal digesta.

    The role of meat in the human diet: evolutionary aspects and nutritional value

    Implications Aspects of human anatomy, digestion, and metabolism diverged from other primates, indicating evolutionary reliance on, and compatibility with, substantial meat intake. Implications of a disconnect from evolutionary dietary patterns may contribute to today’s burden of disease, increasing the risk for both nutrient deficiencies and chronic diseases. Meat supplies high-quality protein and various nutrients, some of which are not always easily obtained with meat-free diets and are often already suboptimal or deficient in global populations. Removal of meat comes with implications for a broad spectrum of nutrients that need to be accounted for, whereas compensatory dietary strategies must factor in physiological and practical constraints. Although meat makes up a small part (<10%) of global food mass and energy, it delivers most of the global vitamin B12 intake and plays a substantial role in the supply of other B vitamins, retinol, long-chain omega-3 fatty acids, several minerals in bioavailable forms (e.g., iron and zinc), and a variety of bioactive compounds with health-improving potential (e.g., taurine, creatine, and carnosine). As a food matrix, meat is more than the sum of its individual nutrients. Moreover, within the diet matrix, it can serve as a keystone food in food-based dietary interventions to improve nutritional status, especially in regions that rely heavily on cereal staples. Efforts to lower global meat intake for environmental or other reasons beyond a critical threshold may hinder progress towards reducing undernutrition and the effects this has on both physical and cognitive outcomes, and thereby stifle economic development. This is particularly a concern for populations with increased needs and in regions where current meat intake levels are low, which is not only pertinent for the Global South but also of relevance in high-income countries.

    The effect of three different preservatives on the numbers and types of bacteria, Brix percentage, pH and nutritional composition of bovine colostrum sourced from New Zealand dairy farms

    AIMS: To investigate the effect of preservation by addition of yoghurt starter, potassium sorbate and citric acid on counts of aerobic bacteria, Lactobacillus spp., Streptococcus thermophilus and coliforms, Brix percentage, pH, protein, fat and anhydrous lactose concentrations at 0, 7 and 14 days after collection for colostrum stored at ambient temperature. METHOD: Approximately 2 L of first milking colostrum was collected from 10 farms in the Waikato region. Following mixing, it was split into five 400-mL sub-samples and allocated randomly to a control (two sub-samples), or treatment with yoghurt, potassium sorbate, or citric acid preservative. Throughout the trial samples remained in the laboratory at ambient temperature with the lids slightly ajar, and were stirred daily for 15-30 seconds using a sterile spatula. Sub-samples were tested on Days 0, 7 and 14. On Days 0 and 14 aerobic bacteria (by aerobic plate count (APC)), Lactobacillus spp., coliforms and Streptococcus thermophilus counts, pH, Brix percentage, protein, fat and anhydrous lactose were measured. On Day 7 only bacterial counts were completed.The data were analysed using non-parametric clustered bootstrap sampling to estimate the effect of treatment, time, and their interaction on the outcome variables. RESULTS: Compared to control samples, on Day 7 the APC for potassium sorbate (1.0 (90% CI = 0.6-1.6) × 108 cfu/mL) was approximately seven-fold lower than for yoghurt (7.3 (90% CI = 4.1-11) × 108 cfu/mL), and approximately three-fold lower than citric acid (3.2 (90% CI = 0.2-4.3) × 108 cfu/mL) remaining low to Day 14. All preservatives reduced coliform growth compared to control samples at Day 7 but growth was lower for potassium sorbate than the other preservatives. For Lactobacillus spp., at Day 7, samples with yoghurt preservative had greater counts than the other two preservatives. Potassium sorbate reduced growth of S. thermophilus compared to the other treatments, especially at Day 7, with 7-10 times fewer S. thermophilus per mL compared to the other three groups. All groups showed an obvious acidification over time, with very little variation within days and treatment groups. There was no evidence for change in fat or protein percentage over time regardless of treatment. CONCLUSION AND CLINICAL RELEVANCE: Aerobic and coliform bacteria proliferate extensively in unpreserved colostrum. All preservatives decreased coliform counts compared to un-preserved colostrum, but potassium sorbate was more effective at decreasing both coliforms and aerobic bacteria than either yoghurt or citric acid.

    Bone Health in Premenopausal Women with Coeliac Disease: An Observational Study.

    Low bone mineral density (BMD) is common in adults with coeliac disease (CD), even in individuals adhering to a gluten-free diet (GFD). Women are more likely to have low BMD and have an increased risk of osteoporosis, so women with pre-existing low BMD related to CD are at an even higher risk. BMD assessed by dual X-ray absorptiometry (DXA) and bone quality assessed through quantitative ultrasound (QUS) were investigated in 31 premenopausal women with CD consuming a GFD, and 39 matched healthy controls from the Lower North Island, New Zealand. In addition, bone metabolism and nutrient status were assessed, and four-day diet diaries were used to estimate nutrient intake. No statistically significant differences were found in BMD assessed by DXA between the two groups at the hip, lumbar spine or forearm. However, the parameters measured by the QUS were significantly lower in CD participants. Dietary data indicated significantly lower intakes of energy, dietary fibre, magnesium and phosphorus in women with CD, likely as a result of a reduced intake of wholegrain foods, and suggested that both groups had inadequate intake of calcium. No significant differences were demonstrated in biochemical parameters. BMD and bone biomarkers indicated no differences between coeliac and healthy women in New Zealand. However, these findings suggest that QUS may be more sensitive for the coeliac population, due to the disease's affect on the trabecular bone, and warrant further research.

    The Effect of Lameness on Milk Production of Dairy Goats

    Lameness on dairy goat farms is a welfare concern and could negatively affect milk production. This study's objective was to evaluate the effects of clinical lameness on the daily milk production of dairy goats. Between July 2019 and June 2020, 11,847 test-day records were collected from 3145 goats on three farms in New Zealand. Locomotion scoring of goats used a five-point scoring system (0 to 4). The dataset was split into two groups by lactation type, where goats were classified as being in seasonal lactation (≤305 days in milk) or extended lactation (>305 days in milk). A linear mixed model was used to analyze datasets using milk characteristics as the dependent variables. Severely lame goats (score 4) in seasonal and extended lactation produced 7.05% and 8.67% less milk than goats not lame, respectively. When the prevalence of severe lameness is between 5 and 20% of the herd, the estimated average daily milk income lost was between NZD 19.5 and 104 per day. This study established the negative impact of lameness on milk production and annual income in dairy goats on three farms.

    Dynamic In Vitro Gastric Digestion of Sheep Milk: Influence of Homogenization and Heat Treatment

    Milk is commonly exposed to processing including homogenization and thermal treatment before consumption, and this processing could have an impact on its digestion behavior in the stomach. In this study, we investigated the in vitro gastric digestion behavior of differently processed sheep milks. The samples were raw, pasteurized (75 °C/15 s), homogenized (200/20 bar at 65 °C)-pasteurized, and homogenized-heated (95 °C/5 min) milks. The digestion was performed using a dynamic in vitro gastric digestion system, the human gastric simulator with simulated gastric fluid without gastric lipase. The pH, structure, and composition of the milks in the stomach and the emptied digesta, and the rate of protein hydrolysis were examined. Curds formed from homogenized and heated milk had much looser and more fragmented structures than those formed from unhomogenized milk; this accelerated the curd breakdown, protein digestion and promoted the release of protein, fat, and calcium from the curds into the digesta. Coalescence and flocculation of fat globules were observed during gastric digestion, and most of the fat globules were incorporated into the emptied protein/peptide particles in the homogenized milks. The study provides a better understanding of the gastric emptying and digestion of processed sheep milk under in vitro gastric conditions.

    The Influence of Rotational Length, along with Pre- and Post-Grazing Measures on Nutritional Composition of Pasture during Winter and Spring on New Zealand Dairy Farms

    The quality of ryegrass−clover pasture was investigated between August (winter: start of calving) and November (spring: end of breeding) on pasture-based dairy farms (>85% of total feed from pasture) that had short (n = 2, Farms A and B; winter ~30 days, spring ~20−25 days) or long (n = 2, Farms C and D; winter ~35 days, spring ~25−30 days) grazing rotations to determine whether quality was affected by grazing rotation length (RT). Weekly assessments of pasture growth and herbage quality were made using a standardised electronic rising plate meter, and near-infrared spectroscopy, respectively. Data were subjected to repeated measure mixed model analysis, in which herbage quality was the outcome variable. The highest pre-grazing dry matter (PGDM) and height, post-grazing dry matter (DM) and height, and number of live leaves per tiller (leaf regrowth stage, LS) were present in late spring. Neutral detergent fibre (NDF), acid detergent fibre (ADF), metabolisable energy (ME), and organic matter digestibility (OMD) were positively correlated to each other (r2 ≥ 0.8) whilst ADF and lipid, and ADF and OMD were negatively correlated (r2 ≥ −0.8; p < 0.01). Metabolisable energy content was negatively correlated with ADF and NDF (r2 = −0.7, −0.8, respectively), and was inversely related to PGDM. Metabolisable energy was higher (p < 0.05) in farms with shorter (overall mean: 11.2 MJ/kg DM) than longer (10.9 MJ/kg DM) RT. Crude protein was also inversely related to PGDM and was higher with shorter (23.2% DM) than longer (18.3% DM; p < 0.05) RT. Pre-grazing DM affected the amount of pasture that was grazed and, hence, the amount of DM remaining after grazing (post-grazing DM or residual), so that PGDM was correlated with post-grazing height and residual DM (r2 = 0.88 and 0.51, respectively; both p < 0.001). In conclusion, RT, LS, and PGDM during winter and spring influenced the herbage quality, therefore, better management of pastures may enhance the productivity of dairy cows.
